Two things:
1) Playing with my new basic little point n' shoot camera and it works rather nicely so far (see above photo).

2) As the photo tells you, tomato recipes wanted.
My veggie patch has turned feral. It brilliant! I planted a few tomato plants, but several more came up from the compost that I used and I now have tomatoes everywhere. Those three bowls are from the last three days. We've cooked at least twice that many and the plants are still absolutely full of green ones waiting to ripen. So, before I just grind them up and freeze for later use, I thought perhaps you lovely people of LJ-land might have a favourite recipe involving tomatoes I could try. Preferably recipes that are reasonably healthy.

Hee, mum found one on special. It's juts a very simple point and shoot type camera, but I'm hoping it'll do better at indoor shots than my current camera does. :D

My favourite tomato recipe...


Apart from fresh salsa, which is also fun, I love making this tomato and potato cripsy bake to go with steak or chicken.

You need, per person:

A small potato
A small handful of grape/cherry tomatoes
Spring Onion
Olive oil
Oregano
Garlic
Cheese, if you like

Instructions:

First, slice the spring onion and garlic finely and cook until just soft. Place in an ovenproof dish.

Next, cube the potato, rinse and pat dry. Fry in the remaininhg oil until just browned and softening. Add this to the onions and garlic.

Slice the tomatoes in half or quarters and add to the other things in the dish and mix, trying not to break up the potatoes. Sprinkle on oregano and cheese, if wanted.

Bake in the oven for 10-15min, until tomatoes are soft and cheese is melted.

Those look delicious! (man, am I missing summer veggies right now!) And they're just the type for tomato salsa. you know the proper way of storing it in jars so it lasts you throughout the year?

Er, not exactly... steam?? My mom pours the jam in the jars while it's still hot and closes them... as they cool down they seal themselves.

As for tomato sauce, she puts it in the jars, closes them, then puts the closed jars in a pot, covers them in water, and boils the whole thing for half an hour, then leaves them to cool down. Hope it helps!

Still want recipes? I know I had a homemade ketchup one somewhere + a good pizza dough recipe which I'm sure would make use of plenty of tomatoes. Thought of sundrying any of them too for storing?

Thanks! I've used a lot of them now so I'm not as desperate as I was, but I'd love a pizza dough recipe. Home made pizza is wonderful, but I always buy the bases frozen. :)

Uhm, a little late for the show, but I guess you could try a new recipe the next time the tomatoes go ripe.

The recipe to Letcho.

You will need:

1 or 2 onions
oil
some kind of dry sausage
1.5KG Tomatoes
0.5KG Green peppers
4-6 eggs [or you can do without, however you prefer]

First you chop the tomatoes and green peppers so they're prepared ahead. Then you put oil, onions and the chopped sausage on the frying pan. Stir until the onions are light brown or goldish and the sausage lets out some color. Then add the chopped peppers. Cook with occasional stirring, until the peppers are limp. Then add tomatoes. Stir, then put on the lid. Stir ocassionally until the tomatoes look well cooked [or rather until they start to peel:-] Then add the eggs, stir and let it boil for a minute or two. Serve the Letcho with fresh bread.

Beware, the letcho doesn't look extra appetizing at first, but it's fantastic. You can try it without eggs at first:-)

Maybe next season, as you say. We're finally running out of beautiful tomatoes. Man they've been good this year. Perfect weather for it. :D
