Texans come hither!

If I were to find myself in the great state of Texas toward the end of April, what marvellous things might I be able to entertain myself with?

Are there things one absolutely must do when visiting Texas? Please do tell!

I'd be visiting someone in Dallas and possibly branching out from there depending on time etc.

Edit: Thanks guys, you're making me really want to go now. I am so going to try to sort my holiday time out ASAP. :)

OMG! Thank you! Baseball could indeed be fun. That never would have crossed my mind. We don't really do baseball here in Oz! I &hearts ribs! OMG! I stuffed myself with them one night in Nashville and fell in love! :) Eeee! It all sounds awesome! \o/

God I hope I can get the time off, I'm suddenly getting mixed messages at work, but I'll be heart-broken if I can't go.
