Okay, this here recipe for a MANDARIN CAKE is good! And very simple to make.

I'd take a photo, but mine looks kinda bad, due to operator error, but OMG tastes good! :D

Was planning to also make muffins, but I can't find the muffin tins. Next time I guess. :(

I peeled them and got the pips out, but didn't chop them up any more than that. And I just chucked all the ingredients into the whizzer thingy (mix master?).

I'm sure you could use tinned fruit or even oranges or something. The mandarin, weirdly, isn't an overriding taste in it.

That's why I made 'em. The mandarins I bought weren't that nice, so I wanted to use them up. I suspect it'll taste a bit more mandarin-y if you chuck a bit of the peel in the whizzer too. :)
