Tomato recipes wanted.

Two things:
1) Playing with my new basic little point n' shoot camera and it works rather nicely so far (see above photo).

2) As the photo tells you, tomato recipes wanted.
My veggie patch has turned feral. It brilliant! I planted a few tomato plants, but several more came up from the compost that I used and I now have tomatoes everywhere. Those three bowls are from the last three days. We've cooked at least twice that many and the plants are still absolutely full of green ones waiting to ripen. So, before I just grind them up and freeze for later use, I thought perhaps you lovely people of LJ-land might have a favourite recipe involving tomatoes I could try. Preferably recipes that are reasonably healthy.

Those look delicious! (man, am I missing summer veggies right now!) And they're just the type for tomato salsa. you know the proper way of storing it in jars so it lasts you throughout the year?

um, I assume it involves steam and jars? I've done that for jam and it was less than pleasant. *g*

Er, not exactly... steam?? My mom pours the jam in the jars while it's still hot and closes them... as they cool down they seal themselves.

As for tomato sauce, she puts it in the jars, closes them, then puts the closed jars in a pot, covers them in water, and boils the whole thing for half an hour, then leaves them to cool down. Hope it helps!
