Texans come hither!

If I were to find myself in the great state of Texas toward the end of April, what marvellous things might I be able to entertain myself with?

Are there things one absolutely must do when visiting Texas? Please do tell!

I'd be visiting someone in Dallas and possibly branching out from there depending on time etc.

Edit: Thanks guys, you're making me really want to go now. I am so going to try to sort my holiday time out ASAP. :)

I don't know much about Dallas, but if you can get to San Antonio I recommend The River Walk and El Mercado. Both locations have wonderful food, entertainment and shops.
